TURKEY!

Well, I'm finally done!! Today I baked a turkey and then picked all the meat off the bones. I then put the meat in pint jars and canned them. I had a 20# turkey and got 13 pints of meat. I don't know if you're interested or not but here's the recipe I followed:

Deviled Turkey
1/2 tsp salt per pound
2 T pepper
2 T sage
2 tsp curry
2 tsp garlic powder
2 tsp dried parsley
2 tsp celery seed
1 tsp paprika
1/2 tsp dry mustard
1/4 tsp all spice
3-4 bay leaves, crumbled

Combine spices. Rub turkey well inside and out with vegetable oil. Make pockets in the breast with a sharp knife. Rub spices all over turkey inside and out. Let set overnight. Bake according to directions on the turkey package. Once cool, pick all meat off bones. Put meat into jars. Fill jars with broth. (I used the broth from the turkey. I strained it first.) Pressure can for 90 minutes at 10# pressure.

  1. Now I am wondering why I bought 2 turkeys???!!! So much work...... I might use one for Christmas with my family and cook the other one up for ourselves. So now how will you eat it? Casseroles, sandwiches?? It's so handy to just be able to open a can!

  2. Sigh, wish mine was done. I didn't do it today, after all. Hopefully tomorrow!! :)
    Creamed "chicken" sandwiches, "chicken" enchiladas, "chicken" and noodles, heat it up and eat it with mashed potatoes and gravy, "chicken" spaghetti, the possiblities are endless!! :) Yummo!!

  3. Yum! I agree with Monica, the possibilties are endless! I made chicken tetrazzini tonight with it. I also will use it in soups!
